A new enterprise is brewing in Hancock. In July, the ZBA approved a proposal by 165 Peterborough Road resident Rich Gervin to open a “nanobrewery” and tasting room and a farm store on his property, called Gervinhaus Farm, where he currently raises heritage breed livestock.

“Hornburg Brewing Company … will produce high quality craft beer and farm to table food,” Gervin and his brewmaster, nephew Dean Gervin, wrote on a GoFundMe page for the enterprise. The tasting room and farm stand are the first phase of a greater vision, Gervin said on Tuesday: Ultimately, he hopes to gain the funds and approval necessary to construct a Viking-style longhouse on site where patrons can sample beer and brick oven pizza at a communal long table.

A farm-to-table emphasis is central to Gervin and his nephew’s mission, he said, and they seek to source food and brewing products from in town or nearby as much as possible. Local peaches made it into a Belgian blonde ale they made recently, Gervin said. Right now, the brewery is waiting on final state and federal permits and has the potential to open for takeout sales by the end of the year, Gervin said.

Gervin told the ZBA that the tasting room, when opened, would be open Fridays, Saturdays, and Sundays until 8 p.m. and have about 15 designated parking spaces.
